Pudim de Pão da Zaira

Ingredientes (8 pessoas):

  • 900 Gramas de miolo de pão esfarelado
  • 1 Lata de leite condensado
  • Água (a medida da lata de leite condensado)
  • 125 Gramas de manteiga derretida
  • 2 Ovos, classe L
  • 1 Caneca de passas de uva previamente ensopadas em rum
  • 1 Colher de chá de aroma de baunilha
  • Canela em pó, q.b.

 

Modo de preparação:

No dia anterior, demolham-se as passas no rum e coloca-se o pão ao ar livre para endurecer.

No dia seguinte, pré-aquece-se o forno a 180 graus. Coloca-se o miolo de pão esfarelado numa taça (reserva-se previamente o equivalente a uma chávena de chá de miolo de pão; será utilizado na cobertura do bolo) e adiciona-se o leite condensado, a água, os ovos, a manteiga derretida, a baunilha e a canela. Trabalha-se a mistura com a mão espremendo bem o pão para absorver os demais ingredientes. Depois de bem trabalhada acrescentam-se as passas (o rum pode ser acrescentado ou descartado) e envolve-se bem.

Unta-se uma forma de bolo inglês, de mola, com manteiga e enche-se com o preparado.

Numa taça, mistura-se muito bem o miolo de pão reservado com canela e açúcar e cobre-se o preparado na forma, pressionando com a ponta dos dedos.

Coloca-se no forno e coze-se durante 45 minutos, sensivelmente. Uma vez cozido, retira-se do forno e deixa-se repousar durante 20 minutos. Findo este tempo, desenforma-se e serve-se, podendo ser acompanhado com um creme ou gelado de baunilha.

Zaira’s Bread Pudding

Ingredients (8 pax):

31 Oz of crumbled bread crumb
1 Can of condensed milk
Water (the measure of condensed milk can)
4 Oz of melted butter
2 Eggs, size L
1 Mug of raisins previously soaked in rum
1 Teaspoon of vanilla flavor
Cinnamon powder, as needed

Method:

The day before:

Dunk the raisins in the rum and put the bread in the open air to harden.

The following day:

Preheat the oven to 180 degrees (352 Fahrenheit)

The crumbled bread is placed in a bowl (set aside one tea cup of bread crumb: it will be used to cover the cake) and add the condensed milk, water, eggs, butter, vanilla and cinnamon. Use your hands to stir the dough, squeezing the bread very well to absorb the remain ingredients. Add the raisins (the rum can be added or discarded) and wrap it well.
Grease a loaf pan with butter and fill it with the dough.
In a bowl, mix all together the remain breadcrumb, cinnamon and sugar and cover the dough with it, pressing carefully with the fingertips.
Put it in the oven and cook for about 45 minutes. Once cooked, remove the pan from the oven and allowed to get cold for 20 minutes. After this time, remove the cake from the loaf pan and serve. It can be served with a vanilla cream or vanilla ice cream.
