Creme de cogumelos

Ingredientes (4 pessoas):

 

Para o creme:

  • 450 Gramas de cogumelos
  • 500 Gramas de couve-flor
  • 1 Courgete
  • 1 Nabo
  • 1 Cebola
  • 1 Dente de alho
  • 1 Batata (facultativo)
  • Azeite q.b.
  • Pimenta q.b.
  • Sal q.b.
  • Coentros (facultativo) q.b.

 

Para o topping:

  • 100 Gramas de cogumelos
  • 2 Dentes de alho grandes, picados
  • Azeite q.b.
  • Pimenta q.b. (mas deve ficar picante)
  • 1 Colher de sopa de natas (facultativo)
  • 3 Colheres de sopa de vinho moscatel
  • Sal q.b.

Modo de preparação:

Creme

Descasca-se o nabo, a cebola, o dente de alho, a batata (se se usar) e a courgete e cortam-se em pedaços. Corta-se a couve-flor em pequenos pedaços. Coloca-se tudo numa panela, cobre-se com água e deixa-se cozer; quando os legumes estiverem cozidos, juntam-se os cogumelos. Depois de cozidos, reduz-se tudo a puré com a varinha mágica, tempera-se com o sal, a pimenta e o azeite e deixa-se cozinhar alguns minutos.

Topping

Colocam-se os dentes de alho muito bem picados numa frigideira com o azeite e deixam-se alourar em lume brando. Juntam-se os cogumelos partidos em pedaços pequenos e cozinham-se, mexendo ocasionalmente. Quanto estiverem cozinhados, aumenta-se a temperatura regam-se com o vinho moscatel e, em seguida, com as natas. Envolve-se bem e deixa-se cozinhar ligeiramente.

Serve-se o creme com um pouco do topping por cima, polvilhado com pimenta acabada de moer e com os coentros picados.

Mushroom Soup

Ingredients (4 pax):

For the soup:

  • 15 oz of mushrooms
  • 17 oz of cauliflower
  • 1 Courgette
  • 1 Turnip
  • 1 Onion
  • 1 Garlic clove
  • 1 Potato (optional)
  • Olive oil, as needed
  • Black pepper, as needed
  • Salt, as needed
  • Fresh coriander (optional), as needed

For the topping:

  • 3.5 oz of mushrooms
  • 2 Large garlic cloves, chopped
  • Olive oil, as needed
  • Black pepper, as needed (but, the topping shall be spicy)
  • 1 Tablespoon of Cream (optional)
  • 3 Tablespoons of Muscatel wine
  • Salt, as needed

 

Method:

Soup:
Peel the turnip, the onion, the garlic clove, the potato (if used) and the courgette and cut them into cubes. Cut the cauliflower into small parts. Put everything in a pan, cover with water and let it cook. Once the vegetables cooked, add the mushrooms and keep on cooking. Once cooked, puree it and season with salt, pepper and olive oil and let it cook for a few minutes.

 

Topping:

Put the garlic cloves finely chopped in a frying pan with the olive oil, on a low heat, and let them brown. Add the mushrooms previously cuted in small parts and cook it, stirring occasionally. As long as they are cooked, increase the heat and add the muscatel wine and then, the cream. Wrap well, let it cook slightly.
Serve the soup and garnish it with the topping, sprinkled with freshly ground pepper and chopped coriander.
